Make these pancakes. Chocolate chips, whole wheat flour, and sour cream.

Right now it’s almost midnight, which means it’s 9 AM back in California. You guys are just waking up, and you know what you should do? Make these pancakes. Today. (Tomorrow is okay, too, but it must be this weekend.)

My pancake-flipping skills don’t win any awards, but these are the best pancakes I’ve had in recent memory. Excellent pancakes make for an excellent day.

Sour Cream Chocolate Chip Pancakes
inspired and adapted from Joy the Baker

makes enough for 2 people

3/4 cup whole wheat flour
1/4 cup all-purpose flour
1 tablespoons raw sugar
1 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt*

1 egg
3/4 cup (200 mL) sour cream (I used light sour cream)
1/4 cup milk
1 1/2 tablespoon butter, melted and cooled
1/4 teaspoons vanilla extract

1/3 cup dark chocolate chips

1. Whisk together dry ingredients: whole wheat flour, all-purpose flour, sugar, baking powder, baking soda, salt.
2. In a separate bowl, combine wet ingredients: egg, sour cream, milk, melted butter, vanilla extract.
3. Gently mix dry ingredients into wet ingredients until mostly smooth. Add a little milk if the batter seems too thick.
4. Fold in chocolate and let batter sit for a few minutes.
5. Heat a pan over low heat. Dollop 2 tablespoons of batter onto the pan and flip when bubbles begin appearing and popping. I used a non-stick pan and didn’t need to grease the pan.

*Note: Sour creams vary in their sodium content, especially regular, light, and non-fat versions. My 3/4 cup of sour cream had 20 mg of sodium; you may need to adjust the salt accordingly.

I like blogging about food. When I eat something delicious, I want to be able to physically share it with you guys. It’s logistically impossible to mail you some pancakes, so you guys will just need to recreate it in your own kitchen.

    I’m going to bookmark this recipe and make it soon since i have a bunch of yogurt i need to use up (and yogurt kinda= sour cream yeah?) any other suggestions for the yogurt!!?

    I MADE IT but i used all whole wheat flour bc i was too lazy to get the reg flour and i dont have baking powder so i skipped that and i used yogurt AND IT WAS REALLY GOOD but it tastsed hella whole wheaty haha but other than that it was goood
